In 2012, the distillery launched a limited edition of 6,000 bottles in cask strength, called Evolution, aged for around three years in American casks from the George Dickel distillery in Tennessee. The formula proved popular, so the limited edition was incorporated into the regular range in 2014, with the first bottling taking place in August 2013. The liquid must be around five years old and the alcohol content is reduced to 50°. Since then, it has been one of the distillery's mainstays, alongside Revival and Torfa.
 
 
 

Let's Taste It : 
Iodine and Bourbon, vanilla bean, lemon pulp, grains and cereals. Mineral freshness, gypsum, limestone, smoked wheat, puffed rice, charcoal corn, varnished wood. The palate is initially spicy, with cumin, honeysuckle and ginger. A fine sandy beach at low tide. Then some citrus fruits. The finish is quite long, with wood, dry and fresh, and white fruits, pear, green apple, mirabelle plum. A very dry earth, baked by the sun, almost desert-like, a gentle salinity. Dried grapes.
 
In Short, 
I really enjoyed this one, even if I'm not generally a fan of bourbon cask maturation. Well, it has to be a Tennessee Whiskey, not a Bourbon, but it's pretty close. You're totally immersed in the character of this distillery, with a juice that's not too young for once. The price is reasonable, so it's well worth buying for enthusiasts.
