The 16th representative of the 100 Proof range launched last year by Signatory Vintage doesn't say its name. And I might as well say it straight away, it's impossible to guess which distillery it comes from. Given that it's a blend of Bourbon Hogsheads and Sherry Butts, we can expect a fine balance. We don't know how many bottles are produced, but apparently it's fewer than usual with this range, no more than a few hundred.




Let's Taste It : 
Mild and woody honey, mirabelles and white plums, slightly acidic yellow apples, caramel lollipop. Melted butter in which hints of vanilla float. Mineral notes. On the palate, the honey comes through much better, creamy, with a few grains of salt and fried zucchini flowers. Very discreet spices, pepper and cloves. The finish is very decent and long, with melting caramel, coffee beans, varnished wood and cola. A pinch of menthol. White meringue.
 
In Short, 
The nose is a little shy, but the palate is something else. On the whole, it's not bad at all, and you have a good time, despite a few minor flaws. The price is really interesting, and you can still find it if you look hard enough. Fans of the profile shouldn't hesitate.
