Signatory Vintage is presenting this blend of two casks distilled on the same day. These are casks nos. 311562 and 311563, giving us 492 bottles. The maturation is dominated by bourbon.
Let's Taste It :
Perfect balance on the nose, very light vanilla and fairly strong peat, iodised but not overpowering. We're on the beach at low tide. Our feet sink into the damp sand. Salty fragrances, shells, sea worms. Kelp, mud, seaweed. A lemon zest. White fruits on the palate, grapes, plums, mirabelles, and a few exotic fruits. The peat becomes astringent. Excellent finish, long and well-managed, not too strong, slightly pastry-like, with icing sugar and meringue.
In Short,
A very fine blend, and what's surprising is that it gives a rather different result compared to the other bottling, distilled on the same day and kept in casks of the same type. This would obviously be worth investigating further, but this edition is now sold out and the price would be excessive today.
