On 22 September 2010, the equivalent of 11 casks of whisky was distilled in Caol Ila, all of which were sold to Signatory Vintage. The trading company aged the product in Refill Sherry Butts. This one was bottled on 19 March 2020, and 625 bottles were on sale.
The thickness and leather of Sherry, some sea spray. Blood oranges, mandarins, crushed raspberries. Behind, the sea air, a gentle salty breeze, iodine stinging the eyes. Shortcrust pastry, creamy vanilla. Crunchy cherries. Thick caramel. Stringy seaweed. Candied figs. Dried apricots. Banana. Palate saturated with Sherry, thickened by spices, paprika, chilli, ginger. Strawberry syrup, grenadine. The peat is very discreet, only adding to the fullness. Coal, lignite, hot stove, black, stony earth. The finish is powerful, long, liquorish, woody, green tea, a drop of gentian at the very end. Tree leaves. Chestnut cream.
In Short,
This is a very fine bottling, which immediately makes you want to compare it with the other casks. However, despite the quality, the sherry is predominant and somewhat masks the characteristics of the distillery. What's more, it's still expensive for a 9-year-old. It should only be bought by hardened enthusiasts.
