This one, although quite recent, is now the standard of the distillery portfolio. Born from the marriage of American and European Casks, both of them Sherry, it is unfortunately very probably chill filtered.
The Sherry is quite ethereal, mostly Oloroso, leather and applesauce
drizzled with cinnamon. Intense wood, I feel the veins, the bark, the
wind in the leaves. Lemony freshness, a touch of caramel, fruits from
the orchard. On the palate, however, it's a bit light, almost watery,
vanilla and lemon, liquorice, kumquat and lychee. Spices totally under control, clove and cardamom. Long, woody, smoky, delicate, elegant, fresh, mellow finish.
Fondant with apple, white grapes and green olives.
In Short,
There is great work on the casks, the nose is excellent. On the
palate, however, it is a bit flat, but the finish comforts us a little. It would
be a total success with a slightly higher alcohol content.
