The distillery had already tried a bottling aged in Fino Sherry casks in 2020, and I liked it. This time, the number of bottles has been increased, from 10500 to 15650, and the alcohol content has been raised to 50°, which is perfect. Sherry Fino is the driest of all Sherries, and the casks come from La Bodega de José y Miguel Martin originally from the Huelva region, but now established in Jérez.
Unsurprisingly, a nose of dry Sherry, with white fruits and olives, some vegetal notes, and behind that a full, damp, rocky, salty peat. Undergrowth, reeds, a zest of grapefruit. Asphalt. Quite austere on the palate, but full, with hints of pear and baked apple. A dash of caramel, the spices are discreet but a bit exotic: ginger, cardamom, pepper. Pine needles. Long, successful finish, forest, resin, humus, heather, ash and coal. Shortbread biscuits.
In Short,
I didn't like this one as much as the previous 2020 edition. And I'm not the only one: it's less highly rated on Whiskybase. Yet it's older and stronger in alcohol. Perhaps with age, Fino imposes its mark more deeply, and it's a bit of a weird Sherry after all. We're not used to it. Still, it may appeal to enthusiasts, despite its very high price.
